Bacon-Wrapped Soy and Honey Goose Bites

Another variation of rumaki, this is a tasty appetizer that people eat up. Good with other game birds such as duck, pheasant, partridge, and turkey.

  • Cut goose meat into 1-inch cubes. Cut bacon into thirds. Wrap a piece of bacon around a piece of goose and secure with a toothpick. Place in a container.

  • Combine the soy sauce, honey, garlic, and gingerroot and pour over the goose. Cover and refrigerate for 4 or 5 hours.

  • Preheat oven to 375°F.

  • Place a rack on top of the baking pan. Lay bacon-wrapped goose bites on a rack. Bake in the oven for about 20 to 25 minutes, until bacon is crisp. (If bacon is not getting crisp enough, turn on the broiler and broil for several minutes, turning to cook evenly.) Serve hot.

Makes about 48 bites

1 whole goose breast (2 halves)

1 pound bacon (not thick cut)

¾ cup soy sauce

⅓ cup honey

2 cloves garlic, minced

1 teaspoon fresh gingerroot, grated
