Butterflied Grilled Squirrel with Peanut Butter Dipping Sauce
Prepare a hot fire in the grill. Sprinkle squirrels with salt and pepper to taste.
Combine lime zest and juice, sherry, heavy cream, peanut butter, and chili sauce in a saucepan. Simmer for 10 minutes, stirring. Season to taste with salt and pepper. Keep warm.
Melt butter in a saucepan and take out to the grill. Baste squirrels with butter and grill over medium-high heat for about 15 to 20 minutes or until leg meat pulls away from the bone.
Serve with individual bowls of peanut butter dipping sauce and plenty of hand towels.
