Butterflied Grilled Squirrel with Peanut Butter Dipping Sauce

Red or fox squirrels are larger than gray squirrels, weighing in at 1 pound dressed. Three will feed four people. The smaller grays weigh about ¾ pound dressed and feed one person each.

  • Prepare a hot fire in the grill. Sprinkle squirrels with salt and pepper to taste.

  • Combine lime zest and juice, sherry, heavy cream, peanut butter, and chili sauce in a saucepan. Simmer for 10 minutes, stirring. Season to taste with salt and pepper. Keep warm.

  • Melt butter in a saucepan and take out to the grill. Baste squirrels with butter and grill over medium-high heat for about 15 to 20 minutes or until leg meat pulls away from the bone.

  • Serve with individual bowls of peanut butter dipping sauce and plenty of hand towels.

Serves 4

4 whole small squirrels, flattened in half

Kosher salt and freshly ground black pepper to taste

Zest and juice of 1 lime

⅓ cup sherry

⅓ cup heavy cream

¼ cup creamy peanut butter

¼ cup chili sauce

½ cup (1 stick) unsalted butter
