Barbecued Squirrel

This can be cooked outside like the Butterflied Grilled Squirrel, but the barbecue sauce should be applied the last 5 to 10 minutes of grilling. Serve with fresh corn on the cob, sliced tomatoes, and slaw.

  • Preheat oven to 350°F.

  • Lightly coat squirrel pieces with olive oil and sprinkle with the Spicy Chipotle Rub (or rub of your choice). Lay squirrel pieces in a single layer in a baking pan. Bake for 30 minutes.

  • Combine the barbecue sauce, garlic, and sesame oil. Liberally or to taste, brush on meat. Continue to bake for 30 to 60 minutes more, or until meat is fork tender and pulling from the bone. Baste with additional barbecue sauce to taste.

4 whole small squirrels, cut up

2–3 tablespoons olive oil

4 tablespoons Spicy Chipotle Rub (page 23)

2 cups barbecue sauce

3 cloves garlic, minced

1½ teaspoons toasted sesame oil
