Spicy Chipotle Rub by Karen Eagle
Try this fragrant mixture on a whole turkey or duck or big-game steaks or tenderloin. Sauté sliced potatoes dusted lightly with the same rub.
Combine all of the ingredients in a glass jar and cover with a tight-fitting lid. Keeps for up to 3 months.
Giftable Spice Mixtures
Dry spice mixtures make wonderful gifts from the kitchen. They can be made up a few weeks ahead of time. Portion them out in pretty jars. Then affix a nice tag with the name of the rub and how to use it. Don't forget your name on the tag. Your friends will think of you each time they use the rub.
Yields 1 cup
¼ cup garlic powder
2 tablespoons dried ground chipotle
2 tablespoons allspice
2 tablespoons dark brown sugar
1 tablespoon dried cloves
1 tablespoon dried orange zest
1 tablespoon thyme
1 tablespoon dried cilantro
2 teaspoons onion salt
1 teaspoon red pepper flakes
