Rosemary-Dijon Slather

Use a pastry brush to apply this paste to fish, birds, or big game. Then broil or grill to desired doneness.

  • Combine ingredients in a bowl. Stir to blend.

  • Marinate fish for 30 minutes or meat for several hours in the refrigerator. Store slather in the refrigerator in airtight container for up to 5 days.

Slathers

Thick emulsified sauces are what a slather is all about. A slather can be unadorned or used straight from the store-bought bottle. Mustard, mayonnaise, yogurt, and sour cream are all examples of products that can be slathered on a steak or breast. Then the game meat may be baked, broiled, or grilled. Adorn the plain slather by adding some seasoning or fresh herbs.

Yields about 2 cups

1 cup Dijon mustard

⅓ cup fresh Italian parsley, chopped

⅓ cup fresh rosemary, chopped

⅓ cup fresh chives, chopped

2 tablespoons white wine Worcestershire sauce

Zest and juice of 1 lemon

1 tablespoon freshly ground black pepper

1 teaspoon kosher salt
