Pale Ale Marinade by Karen Eagle
This is a great all-purpose beer-based marinade. Use it for the wild game of your choice. For fun, experiment with different kinds of beer, from pale ale to stout.
Combine all of the ingredients except the oil in a food processor or blender. Pulse to combine.
Slowly add the oil, pulsing and blending to emulsify.
Shrimp Boil
Try this beer-based marinade without the oil for a shrimp boil. It would work for crayfish and crab legs, too. With the oil, it is an interesting dressing for a salad of bitter greens like spinach or arugula.
Yields 2½ cups
12–14 ounces beer (pale ale)
¼ cup onion, chopped
Zest and juice of 1 lemon
Zest and juice of 1 lime
3 tablespoons Italian parsley, chopped
3 tablespoons sugar
½ tablespoon salt
½ tablespoon Worcestershire sauce
1 clove garlic, minced
1 teaspoon hot sauce
¾ cup vegetable oil
