Pale Ale Marinade

This is a great all-purpose beer-based marinade. Use it for the wild game of your choice. For fun, experiment with different kinds of beer, from pale ale to stout.

  • Combine all of the ingredients except the oil in a food processor or blender. Pulse to combine.

  • Slowly add the oil, pulsing and blending to emulsify.

Shrimp Boil

Try this beer-based marinade without the oil for a shrimp boil. It would work for crayfish and crab legs, too. With the oil, it is an interesting dressing for a salad of bitter greens like spinach or arugula.

Yields 2½ cups

12–14 ounces beer (pale ale)

¼ cup onion, chopped

Zest and juice of 1 lemon

Zest and juice of 1 lime

3 tablespoons Italian parsley, chopped

3 tablespoons sugar

½ tablespoon salt

½ tablespoon Worcestershire sauce

1 clove garlic, minced

1 teaspoon hot sauce

¾ cup vegetable oil
