Cranberry and Golden Raisin Relish by Karen Eagle
Wild game and cranberry concoctions just seem to go together. This relish is a favorite and can be made a number of different ways. Try substituting pear for the apple or add ½ cup of toasted sliced almonds to it for another variation. The Grand Marnier is pricey, so try apricot brandy or orange liqueur as a less expensive alternative.
Combine all of the ingredients except the Grand Marnier in a saucepan. Bring to a boil, stirring, then turn down the heat to medium.
Simmer, uncovered, for about 30 minutes. Continue stirring until cranberries pop and mixture thickens.
Remove from heat and add the liqueur.
Let cool. May be served at room temperature.
Yields 4 cups
2 (12-ounce) bags fresh cranberries
2 apples, cored and chopped
2 cups golden raisins
1 cup sugar
1 cup orange juice
1 tablespoon ginger, freshly grated
1 tablespoon ground cinnamon
1 tablespoon ground cloves
½ cup Grand Marnier
