Pistachio-Crusted Corbina

Serve this with steamed asparagus and Olive Oil Smashed Potatoes (page 96).

  • Lightly oil the fish fillets and dredge in the pistachios.

  • Sauté in butter over medium-high to high heat. Cook for 4 to 5 minutes per side, turning only once. Serve at once, drizzled with the pan drippings.

Corbina/White Sea Bass

Corbina is a popular sports angler fish that is also known as white sea bass. It's a relative of the croaker and drum families.

Serves 4

1 tablespoon olive oil

4 (6- to 7-ounce) corbina fillets, 1 inch thick

4 tablespoons pistachios, finely chopped

4 tablespoons unsalted butter
