Grilled Ahi Tuna with Sesame-Soy Dipping Sauce

Ahi tuna is so meaty and tender, it deserves to be treated like the finest steak. So grill this to medium-rare at most.

INGREDIENTS | SERVES 4

  • 4 ahi tuna steaks
  • Olive oil for brushing
  • Kosher salt and freshly ground black pepper to taste
  • ⅔ cup rice vinegar
  • ⅓ cup soy sauce
  • 2 cloves garlic, minced
  • 2 teaspoons toasted sesame oil
  • 1 tablespoon ginger, freshly grated
  1. Rinse the tuna under cold, running water and pat dry. Brush with olive oil, and season with salt and pepper.

  2. In a bowl, mix the rice vinegar, soy sauce, garlic, sesame oil, and ginger together. Divide the mixture among 4 ramekins.

  3. Heat the grill, and when it is hot, grill the tuna steaks directly over the flames for about 2 to 3 minutes per side or until medium-rare. Turn only once, halfway through grilling.

  4. Serve at once, sliced on the diagonal, accompanied by the ramekin of dipping sauce.
