Maple Syrup Frosting

Please use real maple syrup. The consistency and flavor make a tremendous difference. This is delicious on the Holiday Nut Cake.

INGREDIENTS | FROSTS an 8” double layer cake

  • 1 cup maple syrup
  • 2 egg whites
  • ¼ teaspoon salt
  • 1 cup black walnuts, hickory nuts, hazelnuts, or pecans, chopped
  1. Heat maple syrup in a small saucepan until a candy thermometer inserted in the liquid registers 245°F.

  2. Place egg whites in a large stainless steel bowl. Slowly add the hot maple syrup to the egg whites, whisking or mixing with a beater the whole time. Add the salt and continue to beat until thick.

  3. Frost cake and sprinkle with the nuts.

Maple Syrup

Maple syrup is sap from the sugar maple tree that has been boiled down to make a thick syrup. It ranges in color from a light amber to a dark variety that looks and tastes like molasses. It is fairly expensive but worth it for the pure flavor. Inexpensive maple-flavored syrups are made with corn syrup or sweeteners and just a small amount of real maple syrup.
