Fresh Pears with Crème Fraîche and Chokecherry Syrup
This is an elegant dessert that makes up quick if you buy the crème fraîche. One cup sour cream stirred smooth with 2 tablespoons of heavy cream can be a quick substitute, if you like. Chokecherry syrup can be purchased at gourmet shops. Otherwise, use the fruit syrup of your choice.
INGREDIENTS | SERVES 4 to 8
- 4 ripe pears, peeled, cored, and halved
- 1 teaspoon lemon juice
- 4 tablespoons sugar
- 1 cup crème fraîche
- ¾ cup chokecherry syrup (or raspberry syrup or sauce)
Place pear halves in a bowl and gently toss with lemon juice and sugar.
Place 2 pear halves on a plate for each serving (or 1 half pear per person).
Spoon crème fraîche over each pear half. Drizzle with chokecherry syrup and serve.
Crème Fraîche
Upscale gourmet grocers may have ready-made crème fraîche available for purchase, but it is easy to make. Pour 1 cup heavy cream into a glass container. Add 2 tablespoons cultured buttermilk. Cover with a tea towel or cloth and let stand at room temperature in a warm place for about 8 to 12 hours, until thick. Will keep refrigerated for up to a week.
