Rosemary, Apple, and Golden Raisin Salsa
A modern twist on fruit salad, serve this from late spring to early fall with grilled and smoked wild game. It is especially nice with smoked turkey.
INGREDIENTS | SERVES 8 to 10
- 1 tart green apple, cored and chopped
- 1 tart red apple, cored and chopped
- 1 yellow bell pepper, seeded and chopped
- 10 green onions, chopped
- ⅓ cup golden raisins
- ⅓ cup dried apricots, chopped
- 2 teaspoons fresh rosemary, finely chopped
- ¼ cup lemon juice
- ½ cup olive oil
- ½ teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
Combine all of the ingredients in a large bowl. Toss to mix well.
Cover with plastic wrap and refrigerate for 1 to 2 hours. Serve slightly chilled.
Colorful Vegetable and Fruit Dishes
Eye appeal can be as important as the flavor of a dish. In fact, the look of a dish is often enhanced by adding colorful ingredients.
