Rosemary, Apple, and Golden Raisin Salsa

A modern twist on fruit salad, serve this from late spring to early fall with grilled and smoked wild game. It is especially nice with smoked turkey.

INGREDIENTS | SERVES 8 to 10

  • 1 tart green apple, cored and chopped
  • 1 tart red apple, cored and chopped
  • 1 yellow bell pepper, seeded and chopped
  • 10 green onions, chopped
  • ⅓ cup golden raisins
  • ⅓ cup dried apricots, chopped
  • 2 teaspoons fresh rosemary, finely chopped
  • ¼ cup lemon juice
  • ½ cup olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  1. Combine all of the ingredients in a large bowl. Toss to mix well.

  2. Cover with plastic wrap and refrigerate for 1 to 2 hours. Serve slightly chilled.

Colorful Vegetable and Fruit Dishes

Eye appeal can be as important as the flavor of a dish. In fact, the look of a dish is often enhanced by adding colorful ingredients. A dish with red, green, and yellow peppers looks great and has a dimension of sweetness with the variety of peppers, each with it's own subtle differences.
