Grilled Flatbread with Aromatic Cilantro Spice Sauce

While you're at the grill cooking duck breasts, elk or venison steaks, or other game, make this excellent bread and sauce to go with it.

  • Lightly brush flatbread with olive oil and set aside.

  • In a food processor, combine cilantro, garlic, caraway, cumin, and cardamom. Blend until smooth.

  • Add the red pepper, jalapeno, and olive oil. Pulse to coarsely chop the peppers, and season with the salt and pepper. Set aside.

  • Prepare a hot fire in a grill. Grill flatbread for about 2 or 3 minutes per side, until warmed and browned.

  • Serve flatbread with sauce and wild game of choice.

Serves 4

1 loaf flatbread

Olive oil for brushing

1 cup fresh cilantro, chopped

3 cloves garlic, minced

1 teaspoon caraway seeds

1 teaspoon cumin seeds

½ teaspoon cardamom seeds

1 red bell pepper, seeded and roughly chopped

1 jalapeno, seeded and roughly chopped

4 tablespoons olive oil

Kosher salt and freshly ground black pepper to taste
