Pineapple Cheddar Bread

This bread is made with sharp white cheddar cheese, but any kind of cheddar or Monterey Jack cheese can be used. This is an excellent bread to have with tea — it's sweet from the pineapple and full of fiber to hold guests over in case dinner is late.

2 cups all-purpose flour

¾ cup sugar

1½ teaspoons baking powder

1 teaspoon salt

½ teaspoon baking soda

2 tablespoons canola oil

1 cup crushed pineapple

2 eggs, beaten

¾ cup shredded cheddar cheese

½ cup chopped walnuts

  • Preheat oven to 350°F.

  • Combine the flour, sugar, baking powder, salt, and baking soda in a large mixing bowl.

  • Combine the oil, pineapple, and eggs in another bowl.

  • Add the pineapple mixture to the flour mixture and stir just to combine. Fold in the cheese and nuts and scrape the batter into an oiled 9″ × 5″ × 3″ loaf pan.

  • Bake for 60 minutes, cool on a rack, and slice when cool.
