Mincemeat Loaf

This bread is made with meatless mincemeat, which consists of raisins and spices. Serve slices with sherry hard sauce for a special occasion. It's also got more fiber than most special festive breads because it contains whole-wheat flour.

INGREDIENTS | SERVES 8; Serving Size 1 slice

  • 1 cup all-purpose flour
  • ¾ cup whole-wheat flour
  • ¼ cup sugar
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • ¼ teaspoon nutmeg
  • 2 tablespoons butter, melted
  • 1 cup buttermilk
  • 2 eggs, beaten
  • 1 cup mincemeat
  1. Preheat oven to 400°F.

  2. Combine the flours, sugar, baking powder, salt, and nutmeg in a large mixing bowl.

  3. Combine the butter, buttermilk, eggs, and mincemeat in another bowl.

  4. Add the mincemeat mixture to the flour mixture and stir just to combine. Scrape the batter into an oiled 9″ × 5″ × 3″ loaf pan.

  5. Bake for 50–60 minutes, cool on a rack, and slice when cool.

Sherry Hard Sauce

Hard sauce is used on all sorts of heavy bread puddings. It's traditional, delicious, and very fattening. It adds no fiber at all. However, if you decide to go for it, use ½ teaspoon per serving. To make it, combine 1/2 cup soft unsalted butter with ½ cup powdered sugar and 2 teaspoons sherry with an electric mixer until fluffy and light. Refrigerate until ready to serve.
