Grape-Nuts Bread

Instead of cereal you may substitute chopped nuts, such as pecans or hazelnuts, for a nutty loaf. The nuts accomplish the same thing the cereal does: they add fiber to the bread.

2 cups all-purpose flour

1 cup sugar

1½ teaspoons baking powder

1 teaspoon salt

½ teaspoon baking soda

¼ cup canola oil

¾ cup milk

1 egg, beaten

1½ cups Grape-Nuts cereal

  • Preheat oven to 350°F.

  • Combine the flour, sugar, baking powder, salt, and baking soda in a large mixing bowl.

  • Combine the oil, milk, and egg in another bowl.

  • Add the milk mixture to the flour mixture and stir just to combine. Fold in the cereal and scrape the batter into an oiled 9″ × 5″ × 3″ loaf pan.

  • Bake for 60 minutes, cool on a rack, and wrap when cool.
