Bean Burrito Torte

This is a layered meal that has stripes of different ingredients so it resembles a layer cake or torte. The sauces and seasonings are available in most supermarkets or Latino markets. You can substitute Monterey Jack or pepper Jack cheese for cheddar for a different take on the classic.

1 cup refried beans

1 cup sour cream

1 tablespoon taco seasoning

9 (8″) whole-wheat tortillas

½ cup enchilada sauce

1 cup shredded cheddar cheese

1 avocado, peeled, pitted, and sliced

¼ cup black olives

½ cup diced tomatoes

¼ cup chopped green onions

1 cup shredded iceberg lettuce

  • Preheat oven to 350°F. Oil a 9″ cake pan.

  • Mix the refried beans, ½ cup of sour cream, and taco seasoning together.

  • Place 3 tortillas on the bottom of the cake pan. Spread half of the refried bean mixture over the tortillas. Spoon half of the enchilada sauce over the beans. Sprinkle half of the cheddar cheese over the enchilada sauce.

  • Place 3 tortillas on top of the cheese. Repeat the layering with the remaining bean mixture, enchilada sauce, and cheese.

  • Top with the last 3 tortillas, cover tightly with foil, and bake for 30 minutes. Remove from oven, remove the foil, cut into six wedges, and invert the pan onto a plate.

  • Remove the pan and garnish the top of the torte with the remaining sour cream, avocado, black olives, diced tomatoes, and green onions. Place the shredded lettuce around the torte on the plate and serve.

Southwest Flavors

You can do hundreds of variations on any southwestern recipe. By adding avocados to the Bean Burrito Torte, you add another dimension. A spritz of fresh lime served on the side acts like a sparkler. A layer of cooked corn also adds a dimension. A sprinkling of fresh cilantro, or parsley also adds fiber and savor. Just keep building!
