Roasted Red Potatoes

The skin of the potatoes is delicious. You can use seasoned salt and hot red pepper flakes to enhance the flavor.

INGREDIENTS | SERVES 4; Serving Size 1 cup

  • 3 pounds small red potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon dried thyme
  1. Preheat the oven to 350°F.

  2. Quarter the potatoes and toss them with oil and seasonings.

  3. Spread the potatoes out on a sheet pan and roast uncovered for 45 minutes.
