Refried Pinto Beans

You can give refried beans added crunch and flavor by sprinkling a mixture of minced carrots, celery, chives, peanuts, or pepitas over the top. Either cilantro or parsley will add a bright green note.

INGREDIENTS | SERVES 4; Serving Size ¾ cup

  • ½ cup diced onion
  • 1 clove minced garlic
  • 2 tablespoons olive oil
  • 2 cups cooked pinto beans, with liquid
  • 1 cup water
  • 1 teaspoon salt
  1. Sauté onion and garlic in olive oil until translucent.

  2. Mash beans and stir half of them into the onion mixture over medium heat.

  3. Stir in half the water and then the remaining beans.

  4. Stir in the rest of the water and the salt and cook for 10 minutes, stirring often.
