Brown Rice

Brown rice makes an excellent oatmeal substrate for those with gluten intolerance. It's wonderful with fresh or dried fruits and berries.

INGREDIENTS | SERVES 4; Serving Size 1 cup

  • 2¼ cups water
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1½ cups uncooked brown rice
  1. Preheat oven to 375°F.

  2. Combine the water, salt, and olive oil in a saucepan and bring to a boil.

  3. Put the brown rice in a 2-quart baking dish and pour the boiling water mixture over it. Stir, cover with foil, and bake for 60 minutes. Fluff with a fork and serve hot.
