Pear Sorbet

This is a great way to save leftover Poached Pears.

INGREDIENTS | SERVES 12; Serving Size ½ cup

  • ½ cup sugar
  • ¼ cup water
  • 3 cups poached pear purée
  • ¼ cup lemon juice
  1. Combine sugar and water in a saucepan and heat just until sugar dissolves. Remove from heat and chill.

  2. Combine chilled sugar syrup, pear purée, and lemon juice.

  3. Freeze in an ice-cream freezer according to manufacturer's instructions.

Sorbet Ice Cubes

Before putting the purée in the ice-cream maker, spoon them into an ice-cube tray and freeze solid. You can add them to iced tea, lemonade, or fruit punch for a delicious extra flavor. Plus you will get vitamins, antioxidants, and fiber from the puréed fruit. At the very least, squeeze some fresh lemon into your ice-cube trays to give your water some flavor.
