Hazelnut Sticks

This dough can be rolled into a log instead of a rectangle for round cookies. Hazelnuts have a sweet flavor and also contain a great deal of protein and fiber.

5 tablespoons soft butter

½ cup sugar

1 egg

1 cup toasted hazelnuts

1 cup all-purpose flour

  • Cream the butter and sugar with an electric mixer until smooth.

  • Add the egg, beat it in, and scrape down the sides of the bowl.

  • 3. Add the hazelnuts and mix. Add the flour and mix to combine.

  • Wrap the dough in plastic wrap, press it down into a fi″-thick, 3″-wide rectangle and refrigerate for 4 hours.

  • Preheat oven to 350°F. Line baking sheets with parchment paper or siliconemats. Remove the dough from the freezer, unwrap, and slice into fi″-thick sticks. Bake 10 minutes, turn the cookies over, and bake 5–10 minutes longer, depending on how dark you want them to be. Cool on a rack.
