Cranberry Relish
This is a Thanksgiving standard. It's an uncooked relish that is great served chilled or at room temperature alongside sliced meats such as turkey and pork. It is loaded with fiber and vitamin C.
INGREDIENTS | SERVES 10; Serving Size ¼ cup
- 1 large seedless orange, unpeeled
- 2 cups cranberries
- 1 cup sugar
Cut the orange into 8 pieces. Put 4 pieces in a food processor with 1 cup cranberries.
Process the cranberries and oranges until chopped but not puréed. Put the chopped mixture in a bowl and add the sugar.
Process the remaining orange pieces and cranberries until chopped and add them to the bowl. Stir the sugar into the cranberries and oranges.
Cover and refrigerate 3 days before serving.
