Tempeh Bacon
Save money by making your own tempeh bacon instead of buying it prepackaged in stores.

1 13-ounce package tempeh
6½ cups water
2 cloves garlic, minced
1 teaspoon fresh ginger, minced
¾ cup soy sauce
1 tablespoon maple syrup
½ teaspoon garlic powder
1 tablespoon liquid smoke
2 tablespoons vegetable oil
Cut the tempeh in half lengthwise, then cut the 2 slabs in half widthwise (as if you were slicing a roll), creating 4 squares that are nearly identical in size. Next, cut the tempeh into smaller strips, about 1″ × 3″.
Add the tempeh, 6 cups of water, garlic, ginger, and ½ cup soy sauce to the pressure cooker. Lock the lid into place; bring to high pressure for 20 minutes. Remove from the heat and quick-release the pressure. Remove the tempeh.
In a small bowl, mix ½ cup water, ¼ cup soy sauce, maple syrup, garlic powder, and liquid smoke. Place the tempeh in a small casserole dish and pour the marinade on top of it. Allow the tempeh to marinate for about 30 minutes.
Add the oil to a pan and sauté the “bacon” until it is brown on both sides.
