Roasted Shallots
These sweet jewels pair surprisingly well with both Eastern and Western foods. The Thais actually use shallots as often as the French!
INGREDIENTS | SERVES 4
- 16 medium shallots, peeled, ends trimmed, root core left intact
- 1 teaspoon sugar
- 2 tablespoons olive oil
Heat oven to 350 degrees. Toss the shallots with the sugar to coat. Heat the oil in an oven-safe skillet over medium heat; add the shallots. Cook 1 minute, just to start the browning. Turn the shallots, and place the pan in the oven.
Roast for 30 minutes. Transfer to a plate to cool slightly. If necessary, peel off any leathery outer layers before serving.
