Gingered Mashed Sweet Potatoes
This may become a staple on your Thanksgiving table.
INGREDIENTS | SERVES 5 or 6
- 4 medium sweet potatoes or yams (about 1½ pounds)
- ¼ cup milk
- 2 tablespoons butter
- 1 tablespoon mashed candied ginger or 1 tablespoon brown sugar plus ½ teaspoon ground ginger
Peel and quarter the sweet potatoes, and cook in boiling salted water until tender, about 20 minutes. Drain and return to the pan.
In a small saucepan or in the microwave, heat the milk and butter; add to the potatoes, along with the candied ginger; mash by hand or with an electric mixer. Texture will be thicker than mashed white potatoes.
