The Many Faces of Puff
Store-bought puff pastry dough saves you the inelegant task of repeated rolling and resting required to manufacture the stuff yourself. This frees you to use the dough whenever you want, which may be plenty often, once you discover its advantages. Here are just a few examples: Chop and sugar some apples, wrap them in puff pastry, seal with egg wash, and bake for instant apple turnovers. Cut disks, spoon in mashed potatoes and leftover curry vegetables: Voila! Instant Indian Pakoras. Try some cheese and black bean chili in a puff pastry pouch. Bake them off and they're Mexican empanadas. Even a small wheel of French Camembert cheese, or Brie, wrapped in puff pastry dough and baked until golden is a quickie elegant fromage en croute hors d'oeuvre. Cut disks, bake them between two baking sheets, and garnish with sauce and cheese for mini pizzas. Cut into strips, sprinkle with grated Parmesan, pinch in the center, and bake for “Parmesan Bowties.” The possibilities are endless.
