Classic Chocolate Chip Cookies

Just like mom used to make, only with a bit of applesauce to cut down on the fat a bit.

INGREDIENTS | YIELDS ABOUT 2 DOZEN COOKIES

  • ⅔ cup vegan margarine
  • ⅔ cup sugar
  • ⅔ cup brown sugar
  • ⅓ cup applesauce
  • 1½ teaspoons vanilla
  • Egg replacer for 2 eggs
  • 2½ cups flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon salt
  • ⅔ cup quick-cooking oats
  • 1½ cups chocolate chips
  1. Preheat oven to 375°.

  2. In a large mixing bowl, cream together the vegan margarine and white sugar, then mix in brown sugar, applesauce, vanilla, and egg replacer.

  3. In a separate bowl, combine the flour, baking soda, baking powder, and salt, then combine with the wet ingredients. Mix well.

  4. Stir in oats and chocolate chips just until combined.

  5. Drop by generous spoonfuls onto a baking sheet, and bake for 10–12 minutes. For a chewy cookie, don't be tempted to overbake them!
