Tofu, Oil, and Vinegar Salad Dressing

This salad dressing is very adaptable. Try adding your choice of fresh or dried herbs, spices, or freshly ground black pepper.

INGREDIENTS | SERVES 4

  • 1 tablespoon plus 1 teaspoon extra virgin olive oil
  • 2 tablespoons firm silken tofu
  • 1 tablespoon cider vinegar
  • 1 teaspoon ground mustard
  1. Put all the ingredients in a small bowl and whisk to combine.

  2. Pour over prepared salad greens and vegetables.
