Soft Polenta and Peas
This is a savory breakfast with a touch of sweetness from the peas. You can add sweet winter squash, carrots, corn, or lemon juice for variety.
INGREDIENTS | SERVES 4
- 1 cup regular enriched corn grits
- 4 cups water
- ¼ teaspoon salt
- ½ cup frozen peas
In a saucepan, toast corn grits until fragrant. Add water and salt.
Bring to a boil, lower the heat, and simmer, covered, for 20 minutes. Stir polenta occasionally.
Add peas and continue to cook until hot.
