Soft Polenta and Peas

This is a savory breakfast with a touch of sweetness from the peas. You can add sweet winter squash, carrots, corn, or lemon juice for variety.

INGREDIENTS | SERVES 4

  • 1 cup regular enriched corn grits
  • 4 cups water
  • ¼ teaspoon salt
  • ½ cup frozen peas
  1. In a saucepan, toast corn grits until fragrant. Add water and salt.

  2. Bring to a boil, lower the heat, and simmer, covered, for 20 minutes. Stir polenta occasionally.

  3. Add peas and continue to cook until hot.
