Middle Eastern Chickpea Purée
Also known as hummus, chickpea (or garbanzo bean) purée is a versatile condiment that can be used as a dip or spread with anything from vegetables to breads to meats.
MAKES 2 CUPS
Purée the garlic and salt in a food processor. Add the chickpeas and purée to a paste.
Add the remaining ingredients and process until smooth, scraping down the sides of the bowl.
Transfer the finished purée into a bowl and serve with pita bread wedges.
