Middle Eastern Chickpea Purée

Also known as hummus, chickpea (or garbanzo bean) purée is a versatile condiment that can be used as a dip or spread with anything from vegetables to breads to meats.

MAKES 2 CUPS

6 cloves garlic, peeled

½ teaspoon salt

1 can chickpeas

⅓ cup tahini

2 tablespoons lemon juice

2 tablespoons olive oil

½ teaspoon ground cumin

  • Purée the garlic and salt in a food processor. Add the chickpeas and purée to a paste.

  • Add the remaining ingredients and process until smooth, scraping down the sides of the bowl.

  • Transfer the finished purée into a bowl and serve with pita bread wedges.

Tahini is a paste made from ground sesame seeds that is used in Middle Eastern cuisine. It has a nutty, malty flavor that pairs well with chick peas in the ubiquitous meze dish, hummus.
