Hoisin Dipping Sauce

Make this sauce for dipping Vegetable Spring Rolls (page 212) or Chinese Onion Cakes (page 203).

MAKES ABOUT ¾ CUP

5 tablespoons hoisin sauce

2 tablespoons soy sauce

3 tablespoons plum sauce

2 tablespoons oyster sauce

2 tablespoons honey

1 tablespoon dry sherry

1 tablespoon peanut oil

1 tablespoon peeled fresh ginger, grated

1 tablespoon minced garlic

1 teaspoon Chinese chili sauce

½ teaspoon five-spice powder

Combine all ingredients in a bowl and serve at room temperature.

Try to find an Asian market to purchase condiments and seasonings such as hoisin sauce, five-spice powder, and oyster sauce. They are often less expensive than if you were to buy them in a regular supermarket in the international foods section.
