Avocado and Mango Salad
This combination of avocado, mango, and lime can go with anything from tacos to grilled fish.
SERVES 4
Cut the avocados in half and remove the pits. Cut the avocado, still in the skin, into long thin strips. Scoop them out of the skin with a large spoon. Fan the strips out on a serving plate.
Peel the mango skin with a knife, then cut the sides off of the pit.
Cut the mango into cubes and scatter them over the avocados.
Whisk the shallot, olive oil, lime juice, salt, and pepper together in a bowl.
Drizzle the mixture over the salad and serve.
