Avocado and Mango Salad

This combination of avocado, mango, and lime can go with anything from tacos to grilled fish.

SERVES 4

2 avocados

1 mango

1 tablespoon minced shallot

¼ cup olive oil

1 tablespoon lime juice

Salt and pepper to taste

  • Cut the avocados in half and remove the pits. Cut the avocado, still in the skin, into long thin strips. Scoop them out of the skin with a large spoon. Fan the strips out on a serving plate.

  • Peel the mango skin with a knife, then cut the sides off of the pit.

  • Cut the mango into cubes and scatter them over the avocados.

  • Whisk the shallot, olive oil, lime juice, salt, and pepper together in a bowl.

  • Drizzle the mixture over the salad and serve.
