American Brined Pumpkin Seeds

You need to scrape your own pumpkin out for the seeds in this recipe. A small pie pumpkin is perfect.

SERVES 4

1 cup raw pumpkin seeds

1 cup water

2 tablespoons kosher salt

  • Rinse the pumpkin seeds and dry them overnight on paper towels.

  • Create a brine by mixing the salt with the water until it dissolves.

  • Soak the pumpkin seeds in the brine overnight.

  • Drain, but don't rinse, the pumpkin seeds and dry them on paper towels overnight.

  • Preheat oven to 250°F. Spread the pumpkin seeds in a single layer on a baking sheet. Bake for 1 hour.
