Chinese Barbecued Pork

This is the barbecued pork used to make Chinese Barbecued-Pork Buns (page 217) and Chinese Steamed Pork Bao (page 237), and it also can be added to fried rice and soup.

MAKES 3 POUNDS

1 (3-pound) pork butt, boneless

2 tablespoons hoisin sauce

4 tablespoons ketchup

4 tablespoons sugar

1 teaspoon salt

1 tablespoon dark soy sauce

  • Cut pork into 4 × 2-inch strips, 1 inch thick.

  • Mix the hoisin sauce, ketchup, sugar, salt, and soy sauce together, rub it over the pork strips, and marinate in the refrigerator overnight.

  • Preheat the oven to 375°F. Line a roaster pan with foil and set a rack in the roaster.

  • Put the marinated pork strips on the rack and roast for 45 minutes, turning once or twice.

  • Freeze whatever you won't be using right away.
