Semolina Pasta

This fresh pasta needs only a brief 3 to 5 minutes cooking time in boiling water, instead of about 12 minutes for dried pasta.

SERVES 2

½ cup semolina flour

½ cup flour

½ teaspoon salt

1 egg, beaten

2 teaspoons water (more if necessary)

  • Combine flours and salt and make a well in the center.

  • Combine egg with water and pour into the well in the flour mixture. Gradually bring the flour into the egg with a fork to form a dough, adding drops of water if necessary.

  • When dough has been formed, knead it for 10 minutes. Wrap in plastic.

  • Let rest 45 minutes before rolling with a pasta machine or rolling pin.

You may use all flour instead of half semolina to make pasta. It will be a softer dough, which is easier to knead by hand and roll with a rolling pin if you don't have a pasta machine.
