Herbed Brown Rice

Brown rice takes longer than white rice to cook and it has a chewier texture due to the outer husk that is still intact.

SERVES 8

2 cups water

1 tablespoon olive oil

½ teaspoon salt

1 cup uncooked brown rice

1 tablespoon chopped fresh thyme

1 tablespoon chopped fresh oregano

2 tablespoons chopped fresh flat-leaf parsley

  • Combine everything in a saucepan and bring to a boil.

  • Stir, cover, and reduce the heat to low.

  • Set timer for 45 minutes. After 45 minutes, turn off heat and let rice sit with the lid on for 10 minutes.
