French Toast Pinchos

If you're not a fan of mixing sweet and meat in the same bite, substitute sliced peaches for the sausage. Older bread is best for this recipe.

SERVES 6

3 eggs

¾ cup milk Pinch cinnamon

½ teaspoon vanilla

4 slices bread, Texas-toast thickness

2 ounces butter

6 breakfast sausage links

  • Combine eggs, milk, cinnamon, and vanilla in a bowl using a whisk.

  • Dip the bread slices in the custard, drain the excess, and panfry in melted butter on both sides.

  • Brown the sausage links and cut in half.

  • Put one piece of sausage on one piece of French toast and insert a toothpick.

Waffle Pinchos . . . . . . . . . . . . . . . . . . . . . . . .

Cut up Belgian waffles and put them on toothpicks with whipped cream cheese and sliced strawberries for another brunch pincho.
