North American Cheese Flight

United States cheeses from Oregon, California, and Iowa are served with Canadian and Mexican cheeses for a taste of North America.

SERVES 4

3 ounces Tillamook Cheddar cheese

3 ounces Vella Dry Jack cheese

3 ounces Maytag Blue cheese

3 ounces Canadian White Cheddar cheese

3 ounces Mexican Cojita cheese

  • Slice the Tillamook and Canadian cheddars and arrange them on a platter.

  • Crumble the Maytag Blue and Cojita cheeses and arrange them on the platter.

  • Place the whole piece of Vella Dry Jack on the platter and serve with a cheese planer and serving fork.

Dry Jack is aged Monterey Jack cheese that has been rubbed with a combination of cocoa, oil, and pepper. The texture is hard, similar to fine Parmesan.
