Mexi-Cali Pepper Jack Fondue

The dip known as chili con queso gets a bump up on the heat scale with spicy pepper jack cheese.

SERVES 6

⅓ cup cream

3 ounces cream cheese, chunked

8 ounces pepper jack cheese, shredded

½ cup canned green chilies, chopped

  • Heat the cream in a pan. Stir in the cream cheese piece by piece until it all melts.

  • Add jack cheese over low heat and stir until creamy and melted.

  • Stir in green chilies, remove from heat, and spoon into ramekins or cups to serve.
