Italian Cheese Plate

Pecorino Romano is a hard sheep's-milk cheese and provolone is a semihard cow's-milk cheese.

SERVES 4

4 ounces Pecorino Romano cheese

4 ounces smoked provolone cheese

4 sun-dried tomatoes, oil packed

4 pepperoncini peppers

8 prunes

¼ cup walnuts

4 (4-inch) squares of focaccia bread

  • Crumble the Pecorino Romano into bite-size chunks and cut the provolone into cubes. Put the cheeses onto a platter.

  • Arrange the sun-dried tomatoes, pepperoncini peppers, prunes, and walnuts on the platter.

  • Cut the focaccia into sticks and put in a basket to serve with the cheese plate.

Barolo, Barbaresco, and Chianti are three Italian red wines to drink with the Italian Cheese Plate. Italian liqueurs to enjoy are Sambuca (anise), Frangelico (hazelnut), and Amaretto (almond).
