French Bread Pizza
Fast and easy, this satisfies anyone who needs more than “light hors d'oeuvres” with their happy hour.
SERVES 4
Preheat oven to 400°F.
Slice the loaf of bread in half vertically, then in half again horizontally. You will have four pieces. Set them all with the crust-side down on a baking sheet.
Divide the tomato sauce evenly among the bread pieces, covering all the cut bread on the top. Sprinkle half of the cheese evenly divided among the four pieces.
Slice the zucchini into thin rounds, mince the shallot, and slice the sun-dried tomatoes into ribbons. Divide the zucchini, shallot, sun-dried tomatoes, and olives evenly among the pieces.
Sprinkle the thyme and remaining cheese over the top and bake for 15 minutes or until hot and bubbly. Cut each piece into 2-inch pieces for finger food or serve whole as an open-face sandwich.
