French Bread Pizza

Fast and easy, this satisfies anyone who needs more than “light hors d'oeuvres” with their happy hour.

SERVES 4

1 loaf French bread

1 cup tomato sauce

1 cup shredded provolone cheese

1 small zucchini

1 shallot, peeled

¼ cup sun-dried tomatoes, oil packed

¼ cup Niçoise olives

1 teaspoon chopped fresh thyme

  • Preheat oven to 400°F.

  • Slice the loaf of bread in half vertically, then in half again horizontally. You will have four pieces. Set them all with the crust-side down on a baking sheet.

  • Divide the tomato sauce evenly among the bread pieces, covering all the cut bread on the top. Sprinkle half of the cheese evenly divided among the four pieces.

  • Slice the zucchini into thin rounds, mince the shallot, and slice the sun-dried tomatoes into ribbons. Divide the zucchini, shallot, sun-dried tomatoes, and olives evenly among the pieces.

  • Sprinkle the thyme and remaining cheese over the top and bake for 15 minutes or until hot and bubbly. Cut each piece into 2-inch pieces for finger food or serve whole as an open-face sandwich.
