Cheddar, Bacon, and Green Onion Muffins

These savory muffins make a good accompaniment with soup and they are a nice addition to a brunch selection.

SERVES 12

2 cups flour

⅔ cup sugar

1 tablespoon baking powder

½ teaspoon salt

2 eggs

1 cup milk

3 ounces butter, melted

1 cup grated cheddar cheese

¼ cup bacon crumbles

¼ cup sliced green onions

  • Preheat oven to 400°F. Grease a muffin tin or line it with fluted paper cups.

  • Combine flour, sugar, baking powder, and salt in a large bowl using a whisk.

  • Combine eggs, milk, and butter in another bowl using a whisk.

  • Stir the wet ingredients into the dry ingredients, fold in cheese, bacon, and green onions with a spatula, and fill muffin cups with the batter.

  • Bake 15 minutes.

If you substitute blueberries for the cheddar, bacon, and scallions in the recipe above you will have blueberry muffins. Make mini muffins for a brunch buffet so guests can have a taste and not get filled up. That way they can sample everything else on the buffet too.
