Tomato Bisque with Sour Cream by Nancy T. Maar

1 teaspoon butter or tub margarine, melted
1½ tablespoons potato flour
2 shallots, peeled
1 13-ounce can chicken broth
1 teaspoon Splenda
1 pint cherry tomatoes, stems removed
Salt and pepper to taste
1 teaspoon dried oregano
½ cup low-fat sour cream
Fresh chives, chopped for garnish
Put everything but the sour cream and garnish into your blender and purée. Place in a pot and bring to a boil.
Reduce heat and simmer for 10 minutes. Ladle into bowls and float sour cream on top. Sprinkle with chives and serve.
