Spinach, Pear, and Smoked Ham Salad

This salad is naturally just a bit sweet but not overpowering, and the mayonnaise-lemon juice combo is delicious.

2 cups baby spinach

2 pears, unpeeled, cored, and diced

¼ pound smoked ham, shredded

½ cup Basic Mayonnaise (page 238)

2 tablespoons lemon juice

½ cup toasted pecan pieces for garnish (optional)

  • Arrange the spinach on four plates. Sprinkle the diced pears over the spinach and add the ham.

  • Mix the mayonnaise and lemon juice together and drizzle over the salad. Garnish with toasted pecan pieces.
