Radicchio, Cucumber, and Gorgonzola Salad

This is a colorful combination. It makes an excellent side with fish or shellfish. It's is also sugar-free, healthy, and delicious!You can garnish with nuts or fresh herbs from your garden.

½ cup cider vinegar

½ cup Basic Mayonnaise (page 238)

1 teaspoon Splenda

Salt and pepper to taste

8″ English, seedless cucumber, thinly sliced

2 heads of radicchio, shredded

½ cup Gorgonzola cheese, crumbled

1 tablespoon fresh herbs for garnish

½ cup toasted walnuts, pecans, or pine nuts for garnish

  • Whisk the first 4 ingredients together. Spoon over the cucumbers. Marinate for 2 hours.

  • Spoon over the shredded radicchio and sprinkle with Gorgonzola cheese.
