Celeriac Slaw

The French love celeriac, and it's more and more readily available here. It's an excellent and very tasty sandwich additive to a slice of ham or turkey.

Yields 4 servings; serving size ¼ cup

1 celery root, peeled and slivered

½ teaspoon salt and freshly ground pepper to taste

½ cup Basic Mayonnaise (page 238)

2 tablespoons cider vinegar

½ teaspoon Splenda

¼ teaspoon celery seeds

12 thin slices sugar-free baguette, toasted

  • Place the grated celeriac in a bowl and sprinkle with salt and pepper. Whisk the rest of the ingredients together and dress. Serve on toasted baguette, crackers, or over lettuce.

Salads for Weight Control

There is nothing like a big salad to fill you up. The trick is to use little or light dressing. Dressings with lots of oil, cheese, and sour cream will negate the progress you make with fiber and vegetables.
