Avocado, Tomato, and Bacon over Bib Lettuce

The sweetness is naturally in the vegetables and added to the dressing. The capers add a nice Mediterranean touch.

2 strips crisp bacon, drained

2 small heads of bibb lettuce, cored, leaves separated, rinsed, and spun dry

2 avocados, halved, pits and skins removed, thinly sliced

2 medium tomatoes, cored and diced

½ cup Lemon-Herb Dressing (page 244)

1 tablespoon capers

  • Arrange the lettuce on four plates. Stack the rest of the ingredients or arrange them artfully.

  • Dress and sprinkle with capers.
