Cornish Game Hens in Red Wine Mushroom Sauce

This is an easy and delicious version of a far more complicated recipe.

2 10-ounce Cornish game hens, split

2 teaspoons olive oil

1 teaspoon salt

Pepper to taste

1 teaspoon dried thyme

12 white pearl onions, left whole

4 carrots, peeled, halved lengthwise, and cut into short sticks

⅔ cup dry red wine

1 teaspoon Splenda

1 cup sliced button mushrooms

1 tablespoon Wondra quick blending flour

  • Preheat oven broiler to 450°F. Prepare a large roasting pan with nonstick spray. Rub each hen with olive oil on both sides.

  • Sprinkle the hens with salt, pepper, and thyme. Place them in the pan, skin side down. Place them under the broiler for 8–10 minutes or until brown. Turn the hens. Add the onions, carrots, red wine, and Splenda to the pan and cover. Turn off broiler and reduce oven heat to 350°F.

  • Roast for another 25 minutes. Add the mushrooms and stir the flour into the liquid. Stir to thicken. Serve the hens with vegetables. Drizzle with the sauce.
