Pork Chops Sautéed with Grapefruit by Nancy T. Maar
This is a nice twist for pork chops. It's quick and very simple to make. Serve with carrots or another brightly colored vegetable.

1 teaspoon peanut oil
Salt and pepper
2 4-ounce boneless pork chops
1 tablespoon dried rosemary leaves
1 teaspoon Splenda
½ cup grapefruit sections
½ cup chicken broth
Heat the oil in a nonstick pan over medium-high heat. Sprinkle the pork chops with salt, pepper, rosemary, and Splenda.
Sear the chops, browning quickly on each side. Add the grapefruit sections and broth. Reduce heat to very low.
Cover and cook for about 4 minutes. Turn and cook for another 4 minutes.
Pork and Fruit
Pork and fruit make a happy combination. The flavors, whether spicy and full of citrus or soft and peachy, are excellent together. On the citrus side, try some lime juice. On the sweet side, try using a mango along with the chops or roast.
